Ike Jime Demonstration
Andrew Tsui, the founder of the Ike Jime Federation, will be joining the CCA Maryland booth on Saturday, April 15 to teach a traditional harvesting technique. Ike Jime is a Japanese harvesting method that requires an instantaneous harvest of the fish, thereby providing the highest level quality of fish for consumption. Andrew will be on site to discuss the Ike Jime process and demonstrate the tools and techniques.
At 1:30 pm on April 15, Andrew will be demonstrating the Ike Jime technique during the Blue Catfish: From Catch to Plate Seminar. Andrew will do a live demonstration of the steps he defines as a “considered kill”, then share his approach to preparing a fish for the kitchen.
